Freekeh with fresh salad

Ingredients for 2 people:

  • 200 gr. freekeh
  • 250 ml. Water
  • 15 gr. Soy butter
  • Pepper and salt

Ingredients for lettuce:

  • 1 roman lettuce
  • 5 sweet tomatoes
  • 1 red onion
  • single mint leaves
  • finely chopped parsley
  • drizzle of olive oil
  • 5 radishes
  • the juice of 1 lemon

Preparing the Freekeh:

  1. Wash the freekeh several times with water.
  2. Bake the freekeh in the butter in a deep pot some min.
  3. Season the freekeh with salt and pepper.
  4. Quenching with boiling water allows further cooking on a soft fire with a lid on it,  until the water has evaporated.

Prepare the lettuce:

  1. Cut the lettuce into coarse pieces and wash well with water and dry them.
  2. Cut the tomatoes and radishes into 4 and add them to the lettuce.
  3. Cut the onion into fine strips and add.
  4. Add the mint leaves, parsley, lemon juice and olive oil.
  5. Season with salt

TIP: Serve with a glass of yoghurt drink.
