Freekeh with fresh salad
Ingredients for 2 people:
- 200 gr. freekeh
- 250 ml. Water
- 15 gr. Soy butter
- Pepper and salt
Ingredients for lettuce:
- 1 roman lettuce
- 5 sweet tomatoes
- 1 red onion
- single mint leaves
- finely chopped parsley
- drizzle of olive oil
- 5 radishes
- the juice of 1 lemon
Preparing the Freekeh:
- Wash the freekeh several times with water.
- Bake the freekeh in the butter in a deep pot some min.
- Season the freekeh with salt and pepper.
- Quenching with boiling water allows further cooking on a soft fire with a lid on it, until the water has evaporated.
Prepare the lettuce:
- Cut the lettuce into coarse pieces and wash well with water and dry them.
- Cut the tomatoes and radishes into 4 and add them to the lettuce.
- Cut the onion into fine strips and add.
- Add the mint leaves, parsley, lemon juice and olive oil.
- Season with salt
TIP: Serve with a glass of yoghurt drink.
