• 6 small bunches of parsley finely sliced
  • 2 tomatoes finely diced
  • 2 cucumbers finely diced
  • 3 spring onions finely sliced
  • 1 onion finely diced
  • Juice of 2 lemons
  • 50gr. bulgur
  • 40 ml. olive oil
  • Some roman lettuce leaves
  • Salt


  1. Put the bulgur in a large deep bowl.
  2. Add the vegetables to the bulgur and lemon juice, olive oil, salt.
  3. Mix well all together.
  4. Take serving plates and place the lettuce in it and divide the tabula over it.

You can also add mixed or coarsely sliced Roman lettuce to the Tabula and bring back to taste with salt, lemon juice and olive oil.
